A smooth, silky wine with an exquisite rich bouquet of flowers and fruits.
The ideal complement to traditional dishes such as veal sweetbreads, poached fish.
Type of wine :
French medium-dry sparkling wine. A most excellent traditional dessert wine.
80% Chenin Blanc, 20% Cabernet Franc.
Subsoil type :
A chalky subsoil, known locally as "tuffeau". The minerals in this soil play a vital role in creating wines with a fine sparkle. Another characteristic of this chalky layer is its ability to absorb the sun's warmth by day and diffuse it by night.
Vinification :
Selection of grape juices during extraction. Mastery in the choice of yeast and the blending of the cuvée by the cellar master. The characteristic sparkle develops during the second fermentation in the bottle. We also allow the wine to mature in our cellar for longer than the statutory provisions require..
Tasting notes :
Brilliant pale yellow in colour, with fine bubbles and a rich mousse. A delightful, complex bouquet of flowers and fruits with slight woody notes. A mellow velvety wine with an elegant and refreshing mousse. Serve at 6°C. The ideal match for fish in hollandaise or mousseline sauce, and buttery or creamy desserts. Also excellent with patisserie.
