This medium-dry sparkling red wine is unique and surprising.
Subsoil type :
A chalky subsoil, known locally as "tuffeau". The minerals in this soil play a vital role in creating wines with a fine sparkle. Another characteristic of this chalky layer is its ability to absorb the sun's warmth by day and diffuse it by night.
Vinification :
Selection of grape juices during extraction. Mastery in the choice of yeast and the blending of the cuvée by the cellar master.
Tasting notes :
Shimmering carmine in colour with mauve and violet reflections. A supple smooth wine, characterised by its full body and powerful aromas of fruit (red berries and peaches). Ripe tannins linger on the palate and enhance the structure of the wine. A fine, long-lasting mousse provides a refreshing overtone. Serve at 6°C with strawberries or other red berries. Cuvée Cardinal is also an excellent dessert wine, particularly with chocolate cake.
