This medium-dry sparkling red wine is unique and surprising.
Cabernet Franc 100 %.
Subsoil type :
A chalky subsoil, known locally as "tuffeau". The minerals in this soil play a vital role in creating wines with a fine sparkle. Another characteristic of this chalky layer is its ability to absorb the sun's warmth by day and diffuse it by night.
Vinification :
Selection of grape juices during extraction. Mastery in the choice of yeast and the blending of the cuvée by the cellar master. The characteristic sparkle develops during the second fermentation in the bottle. We also allow the wine to mature in our cellar for longer than the statutory provisions require.
Tasting notes :
Shimmering carmine in colour with mauve and violet reflections. A supple smooth wine, characterised by its full body and powerful aromas of fruit (red berries and peaches). Ripe tannins linger on the palate and enhance the structure of the wine. A fine, long-lasting mousse provides a refreshing overtone. Serve at 6°C with strawberries or other red berries. Cuvée Cardinal is also an excellent dessert wine, particularly with chocolate gâteau.
