100% Cabernet Franc.
A favourite with the people of Champigny, this wine goes well with red or white meats, cheeses and grilled fish.
Type of wine :
A fruity red wine with good structure. Made from grapes grown in our own vineyards. From harvest to bottling, the wine-making process is therefore guaranteed our fullest care in line with our traditions.
Subsoil type :
Our 10 hectare vineyard has a chalky subsoil known locally as "tuffeau". The soil's ability to store the warmth of the sun by day and release it again by night is one of the major factors in assuring the quality of our Saumur Champigny.
Grapes are harvested green in July to reduce the yield. The grapes are completely destemmed and pressed. The skins and juice are left to macerate for three weeks before the juice is fermented in stainless steel vats in a temperature-controlled environment (at around 28°C). This is followed by the malolactic fermentation stage. The wine is matured in vats before it is bottled in late May.
Tasting notes :
A shimmering ruby-red colour. The bouquet is dominated by aromas of red berries. A balanced, fruity palate, rounded with silky tannins. Serve at room temperature (16-17°C) with red or white meat and cheese. Also delicious with grilled fish.
